I am new NCO, and I have been doing research on this subject. Can I write and monthly counseling covering several months and have a current date on that counseling?

No, a monthly counseling covering several months is not a MONTHLY counseling. If this Soldier has recently been placed under your leadership, you simply write their initial counseling, and the following month, you write their monthly counseling. I have to ask, was the Soldier not counseled in pervious months?

I simply forgot to counsil the soldier to be honest. We are in deployment mode and we have been moving so fast that I simply forgot for two months. I know it will make me seem like a s$^t bag NCO, but that is the truth.

Write a memorandum for record based on the lack of missed counselings and then take it from there.

Inform your supervisor.

It's doesn't make you seem like a sh*tbag NCO, no NCO is perfect. TheWiseChief gave some solid advice, that's the route I would take as well.
